Sulfur provides the chemical links needed to form collagen, which is necessary to create and hold the molecular structure of connective tissue, immunoglobulin, enzymes, and most proteins. It is a natural component of almost all fresh fruits, vegetables, seafoods and meat, and causes no side effects due to low toxicity. MSM differs from other forms of sulfur in that it is easily assimilated and used by the body. However, heat and processing reduce MSM levels in foods, making supplementation more important than ever for maintaining healthy MSM levels in the body. Recent studies by researchers at the Oregon Health Sciences University examined a strain of mice prone to spontaneous development of joint lesions. One group was fed a diet that contained a 3% solution of MSM in their drinking water for three months, with the other group receiving normal tap water for the same amount of time. The MSM control group showed no degeneration of articular cartilage, while 50% of the mice in the tap water control group had focal degeneration of articular cartilage.
